Salmon recreated from The Sacred Beast Restaurant OTR


Ingredients
One half pound farm raised salmon cut into a thin slice (whole foods)
4 table spoons butter
2 cloves garlic
2 small spoonfuls of capers
1 small lemon
Handful of fresh cilantro.


Pre-heat the oven to 350 degrees
Put the salmon in the oven and bake for 25 minutes
Meanwhile, melt butter on medium heat and continue to stir occasionally until you get a nice brown color. Set the butter aside.
Saute garlic and capers in olive oil on medium low heat.
Once the garlic turns slightly golden brown transfer the mixture to the melted butter.
Prepare the toppings. Cut the cilantro with herb scissors. Zest the lemon and cut in half for squeezing.
Take the salmon out of the oven when it is a light pink color. place it on a plate and pour over the melted butter mixture. Squeeze the lemon on top. Sprinkle with the cilantro and lemon zest.

*This recipe made about two servings. Some butter sauce was left over. I would try cooking with less butter next time.
