Ingredients:
2 large Sweet potatoes, peeled and diced
1 large onion diced
4 cloves garlic minced
2 table spoons Chili powder
4 teaspoons ground cumin
1/2 teaspoon ground chipolte chili
1/4 teaspoon salt
1 package black beans
2-4 diced tomatoes
1 lime juiced
1/2 cup chopped fresh cilantro
Directions:
According to directions on package bring black beans to a boil then let simmer for an hour. Then follow package directions for cooking. Save some of the black water for cooking (something black comes out of the bean and turns your water black, Idk what it is but since I like whole foods I recommend using this liquid instead of water in your recipe. That way less nutrients are lost during the cooking process and you get all of the bean)
Meanwhile, to stove pot, add oil, sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes.
Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly, for 30 seconds.
Add water and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.
Add cooked beans, tomatoes and lime juice, increase heat to high and return to a simmer, stirring often.
Reduce heat and simmer until slightly reduced, about 5 minutes. Remove from heat and stir in cilantro.
